Baked Goods, Dinners, Holiday
1 spiral sliced, bone in fully cooked ham, 7-10 lbs.
1 cup brown sugar
1⁄2 cup orange juice or pineapple juice
1/2 cup honey
1⁄4-1 teaspoon five-spice powder, baharat (Seven-spice), Garam Masala, or Ras El Hanout
Roasting pan with a rack
Probe thermometer
Adjust oven rack to lower-middle position and heat oven to 250 degrees.
Line the roasting pan with aluminum foil and lay in the rack. Lightly oil.
Unwrap ham and, if necessary, discard plastic disk covering bone. Place ham cut side down. Insert temperature probe through top of ham into center.
Place ham cut side down on prepared wire rack. Cover entirely with foil.
Bake until center registers 110 degrees, around 3 1⁄2 to 4 1⁄2 hours.
Put glaze ingredients in a medium sized pan over medium low heat. Start with the lowest amount of spice, then add more if desired. Simmer until the glaze thickens. Set aside until the ham is ready.
Pull the ham out and set the oven temperature to 450 degrees.
Once oven reaches temperature, brush ham evenly with about 1/2 of the glaze.
Return to oven and cook until glaze is bubbling and starting to brown in places, 5 to 10 minutes.
When the ham is done, put it on a cutting board, cut side down. Slice down the sides, along the bone. Set the bone aside for stock and arrange the slices in layers on a platter. Drizzle remaining glaze over each layer or put it in a bowl so people can add as desired.
